A Delicious Indian Kulfi

Indian Kulfi a delicious dessert, is very popular sweet from the olden days. Many fancy ice-cream parlours have sprung up with irresistible menu and varieties galore in every nook and corner of my city. But nothing to beat the traditional Kulfi which is rich, creamy and most important made from all natural products.
When the supply of milk in my refrigerator surpass the demand, the end results are always Kulfi with different flavors.
This one is the simplest and easiest one I often make, with very few ingredients to go in the recipe.

Ingredients;
  • 1 liter milk (whole milk is best)
  • 11/2 cups of sugar
  • A few almonds or Pistachios

Method: Take a heavy bottom kadai and boil the milk in it at medium flame. Let the milk boil till it is reduced to about 1/4th of its original quantity. Keep removing the cream that forms on the surface and collect it at the sides of the kadai.
At this stage you can add 1 tsp of cornflour to thicken the milk faster, or else let it boil further. Take off the flame once it is dark yellow in colour and is reduced to about 11/2 cups.
Cool it a bit and add the sugar and the coarsely powdered nuts.
Fill the Kulfi moulds if you have one, or just pour the liquid in a plastic vessel, cover it and keep it in the freezer till it is set.
Easy and delicious summer dessert Indian Kulfi is ready for a bite!
Try it and do write about your experience of making it and how did you like it?
